High Chaii

Another day to entertain. My friend Afreen was coming from Dubai. She works in Dubai for a broker firm, and pops over once or twice a year to catch up with her family and children. And US.

She lives in Dubai, I really can’t compete with that place to take her anywhere fantastic to spend time with her. Dubai is the hotspot of dining and wining. Also our weather is terrible. Yep she’s from UK, so is aware of this, but generally runs off to Dubai to get away from the weather here.

So I decided instead of taking her out, I would throw her a High Chaii party at mine. (High Chaii is the Indian equivalent to the british Afternoon tea). and that way I can make it that extra special.

So I invited a few of our friends over and I created this

Well firstly, I’m sure you know by now I have a love for cups- I’m talking about tea cups here. So I had a chance to show case my new teacups. I got these from my trip in India- and it goes so well with the theme.

And now ill break down what I made.

This is something I improvised with. I don’t have a name for it, so please feel free. I basically chopped up onions and tomatoes and added salt, chilli powder, lemon juice, and ready made salsa. I deep fried poppadoms and put the onion mixture in the middle. And boy was it divine. Do try it. It’s mouthwatering.

A Fruit Platter. Always a must. Always pretty. Always colourful. Always in my parties!

Khaman. I ordered these, they are a yellow steamed cake made out of chick pea flour. It has a tangy and sweet flavour and goes soo well with green chutney.

Dahi Vada. These are deep fried lentil balls soaked in yoghurt topped with spicy and tangy chutneys, like green chutney and tamarind sauce. And then finished off with spice powders ( I can see you salivating). This is a traditional Indian street food. I served these up in cocktail glasses to give it a grandeur look.

Kheema pockets and Omelette rolls. The Omelette rolls are basically masala omelettes wrapped around a chappati. And I split this into two.

And the Kheema pockets, is minced meat cooked with Indian masalas, and then put into halved pitta nan’s with lettuce, cucumbers and tomatoes. (Definately the biggest hits of the day. I may need to do a step by step blog on this).

Next up we had Punjabi vegetable samosas (which I bought) and home made mango puree and puris. The puris was made by a dear friend, they are an Indian deep fried bread which we dunk into the mango puree.

I also added some croissants, tea cakes, scones and marmalade.

And lastly

We had Tea, orange Juice and drinks because my dear guest does not like Tea. So I served her up some Pepsi in my wonderful tea cup.

Red Velvet Cookies

Hi All, So sorry I dissapeared for a little while. Life came in the way. Granni was admitted into hospital again with pneumonia, so we were back to our rotas and shift work at the hospital. The tough cookie fought it like a pro, and is back home now.

The hubby got Man-Flu ( that really is a thing by the way, more on this later) and my best friends brother got married. So its been a hectic ride.

But I’m back…..

…..With my famous red velvet cookies recipe.

For the ones that know me, you know what im talking about- for the ones that dont- whilst in my baking Era these along with my Lamingtons and Marshmallows were my biggest sellers. So big that when I bake them, I no longer put it on my social media, because I will get hounded by my beloved customers to make them.

So here goes:

Ingredients

  • (makes 15)
  • 115 grams butter (I use stork)
  • 150 grams brown suger
  • 50 grams granulated suger
  • 1 egg
  • 1 tablespoon Milk
  • 1.5 tablespoon red food colouring (gel colours are better)
  • 198grams Plain flour (yes! 198- not more or less!! trust me!)
  • 10 grams cocoa powder
  • 1 teaspoon bicarbonate soda
  • 1/4 teaspoon salt
  • 150 grams choc chip chocolates
  • glitter to decorate

Method:

Cream the butter, brown suger and granulated suger together.

Add the egg and beat again

Sift the flour, cocoa, bicarbonate soda, and salt, add to the creamed mixture and beat. Once beaten add the milk.

Add the red food colouring, and 3/4 of the chocolate chips and mix.

You should get a red sticky mixture like below.

Put this sticky mixture on a clingfilm

Roll it up and put it into the fridge, usually between 1-4 hours. (for a small amount like this 1 hour is sufficient). 15 minutes before taking out mixture switch the oven on at 180degrees.

When you remove the cold mixture- it will no longer be sticky, take a handful of the dough and form into small balls like below

Put it into a baking tray with greaseproof paper below- leave space around the dough balls as cookies will form in oven.

Put into oven for 12 minutes

Once out add few choc chips on top and allow to cool on a drying rack.

Add a little glitter and enjoy with your tea.

So there you go. My Secret Famous Red Velvet recipe. No longer a secret and all yours now. So stop asking me to make you some! And make sure you drop some off to me.

Tooth Update

So back to my tooth. I’m thinking of adding a tab on my contents just for my tooth journey, as it’s proving to be a long ride.

It’s been 3 weeks and I’ve not suffered any pain at all, since the tooth was filled in from the previous appointment of the failed root canal.

From the two options I decided on the extraction. Once its gone at least I know the pain will never come back. With the Root Canal, there’s no guarantee that it’ll solve the problem.

I did have anxiety- not over the procedure because I knew I was going to a specialist, I knew the procedure will probably be the easiest I’ve ever had. I had anxiety because I knew would be in pain after, I was worried about how long the pain would last, and whether it would get infected or not.

I was actually quite pleased to be going to a specialist, as I knew the procedure would take 20 minutes maximum and the tooth would be out, rather than the one and a half hour it took at my last appointment.

Before I went in, I spoke to a girl sitting outside who was having 3 tooth taken out, and she had been here previously and although uncomfortable she was quite upbeat about it. That put me at ease. I was only having one taken out.

Once inside, I made sure I asked the dentist to make sure it was the right anaesthetic, and if my dentist had made him aware of my situation. He advised me he would give me the adrenaline and yes, he was made aware, and that was why she had sent me to him.

I did ask him again, that the adrenaline makes my bp go low and I end up collapsing and vomiting. He assured me that he was using the right one.

Should I ask you to guess what happened?

As soon as he put the first one in, my heart started palpitating. He assured me it was all normal, and it should take 2/3 minutes before it slows back down. He then put another 2 in, at the front and the side of my tooth.

Back at reception, I waited for the adrenaline to kick in and numb my tooth. And then….. It all started…

The room started spinning, I started spinning, I remember someone asking if i was ok, I said ‘no’. The floor beneath me was going further and further down, I was falling, my body started shaking. I heard them say ‘take her to the back’ I remember trying to get up, but the floor kept disappearing beneath me, I kept falling, I knew I was being dragged to a room in the back, I could feel eyes all over me.

At the back they lay me down, my body was shaking furiously, they asked if I’m cold. I was too hot. I said “hot, too hot”, I removed my jumper, my scarf. One of the ladies got me a cold wet towel and put on my forehead, it felt wonderful. I told her, she started to put over my eyes and my face, my body was still shaking.

They told me to open my eyes, I couldn’t do it, the ceiling was moving, and then I felt the bile in my throat, and the next minute I threw up…. All over the place. Like everywhere. Spluttered. It was awful. It felt like pregnancy and morning sickness all over again.

Do you want me to carry on? Because it doesn’t get better.

The end of it, well my tooth is still in my mouth, but how long before it starts hurting- we don’t know.

I do remember one of the ladies saying that I should be referred to the hospital, and why haven’t I been referred if this happens all the time. I’m really hoping for this.

I don’t remember much of what the dentist said, its all a blur, but there were talks of doctors, and waiting, and letters, and hospitals and operation.

I’ll have to call in and find out further on Monday.

This tooth situation really troubles me, its so horrible to have all eyes on you. I hate being helpless, I hate that people have to clean up after me, I hate that they have to look after me. I hate that my husband sees me in this state.

The hubby took a very tearful and disorientated me home, and I slept until the adrenline wore off, which was roughly 4 hours. Ive got up now, still feel a bit dizzy, but I’m talking and walking, and writing this. May need a couple more hours before I’m back to normal, and get through this trauma again.

There has to be another way. I can’t go through this again. And I can’t expect others to go through this also.

I Just needed a vent.
